This is possibly the easiest and quickest recipe we have ever tried. It's sweet and bright and the perfect treat for any occasion, whether it be for friends, a special someone, or just personal indulgence. Best part is, it only takes 15 minutes to prep.

Red Velvet Sandwich Cookies
Adapted from
Yields: around 15 sandwich cookies (or 30 red velvet cookies)
Time: 30-45 minutes
Ingredients
1 box red velvet cake mix*
1 can cream cheese frosting**
1/2 cup butter
2 eggs
*Any cake mix should work, and I can assure that these red velvet cookies made from cake mix actually taste pretty amazing.
**You can also choose to make the frosting from scratch using this

. Be sure to adjust measurements as necessary.
Directions
1. Preheat oven to 350 degrees and grease the pan.
2. Mix ingredients until combined.
3. Drop spoonfuls of cookie batter onto pan about two inches apart. The cookies will expand in the oven.
4. Bake for 10-12 minutes. The cookies will be fairly delicate when they're first taken out of the oven. Cool before frosting. Serve & enjoy!
