I think the photos do much better justice to these things than any description I can give - they're exactly what they sound: Oreos encased in a peanut butter cookie. The Oreo gets nice and soft and mushy during the baking, and become this perfect chocolatey center for the peanut butter cookie. Kind of like an inside-out cookie form of a Reeses.
I guess I'm supposed to be posting something Thanksgiving-related, but who says you can't serve these too?
Here's how you stuff these cookies:
Make your wonderful peanut butter cookie dough, and then plop a little under 2 tablespoons on top of the Oreo.
Do the same thing for the bottom, and the shape the dough around the Oreo.
Roll the dough in sugar and use a fork to make a cross hatch on top of the cookie.
Bake, let cool, and enjoy!

Oreo-Stuffed Peanut Butter Cookies

Yields: 24 cookies
Cookie dough recipe adapted from Sally’s Baking Addiction
Ingredients
1 cup butter, softened
1 cup light brown sugar
2 eggs, at room temperature
1 ½ cup peanut butter
2 teaspoons vanilla extract
1 teaspoon baking soda
2 ½ cup all-purpose flour
1 teaspoon salt
24 Oreo cookies
⅓ cup granulated sugar, for rolling the cookies in
Directions
Cream the butter and brown sugar until light and fluffy. Beat in the peanut butter, and the eggs, one at a time. Beat in the vanilla extract.
In a separate bowl, whisk together the flour, salt, and baking soda. Add the dry ingredients to the butter mixture and mix until just combined.
Place about 1 ½ tablespoons of dough on top of an Oreo cookie and another 1 ½ tablespoons on the bottom. Flatten the dough so that it covers the cookie.
Roll the cookie in the granulated sugar, and place on the baking sheet. Flatten the cookies slightly with a fork, making a crosshatch pattern.
Bake the cookies for 10-12 minutes, until the edges just begin to turn golden. Let cool and EAT!
